In Papua New Guinea , PanAust holds a 100 per cent interest in the Frieda River Limited Copper-Gold project, which is a transformative pre-development integrated mining, renewable energy and infrastructure project. The complete Frieda River Project represents a nation building opportunity for Papua New Guinea and a transformative sustainable development opportunity for the Sepik region. The Project will help build stronger and more viable communities by establishing necessary public infrastructure, generating skilled employment, and creating business opportunities for local people. In Laos , PanAust owns a 90 per cent interest in Phu Bia Mining Limited with the Government of Laos owning the remaining 10 per cent. Phu Bia Mining owns and operates PanAust’s two award winning operations – Phu Kham Copper-Gold and Ban Houayxai Gold-Silver, both located in Xaisomboun Province, 120km north of Vientiane. In Chile , PanAust holds a 66 per cent interest in the Inca de Oro Copper-Gold Project through a Chilean incorporated joint venture company, Inca de Oro S. A. The Role We are currently recruiting for experienced team members to join us on a Fixed-Term basis for a period of Six (6) months to support our Drill Program. We are seeking an experienced Chef to join our Camp Services team on a Fixed Term basis at the Frieda River Project . Reporting to the Camp Services Supervisor, this position is responsible to plan, prepare, and deliver safe, nutritious, and high-quality meals that support the health, wellbeing, and productivity of employees and guests at the Frieda River Project Site. The Chef ensures compliance with food safety standards, effective stock management, and professional kitchen operations in a remote camp environment. Key Responsibilities Food Preparation & Service Plan and prepare daily menus in accordance with approved meal plans and dietary requirements. Prepare, cook, and present food including baking, roasting, grilling, frying, and other culinary techniques. Ensure meals are prepared and served to required quality and presentation standards. Cater for special dietary needs, allergies, and cultural food requirements where applicable. Ensure timely meal service in accordance with camp schedules. Food Safety & Hygiene Ensure full compliance with food safety and hygiene standards, including HACCP principles. Maintain proper food handling, storage, and temperature control procedures. Monitor and record fridge/freezer temperatures and other required food safety checks. Ensure safe thawing, preparation, cooking, cooling, and reheating processes. Maintain a clean, sanitised kitchen environment at all times. Prevent cross-contamination through correct food segregation and hygiene practices. Ensure compliance with health regulations and company procedures. Inventory & Stock Control Monitor food stock levels and maintain accurate inventory records. Rotate stock using FIFO (First In, First Out) principles. Identify and report low stock levels to ensure continuity of food supply. Minimise food waste and manage portion control responsibly. Coordinate with procurement/logistics for food orders in a remote supply environment. Kitchen Operations & Housekeeping Ensure kitchen equipment, utensils, and work areas are cleaned and sanitised after each shift. Maintain kitchen equipment in safe working condition and report defects immediately. Supervise safe storage of dry goods, refrigerated items, and frozen products. Support camp cleanliness standards in collaboration with housekeeping staff. Compliance & Reporting Maintain required food safety records and monitoring documentation. Report food safety incidents, contamination risks, or supply issues immediately to the Senior Admin Officer. Participate in internal inspections and audits. We are looking for candidates who possess: Minimum 5 years’ chef experience Diploma or Vocational Certificate in Culinary Skills preferrable. Skilled in food preparation and cooking methods Menu planning and meal preparation Food safety & hygiene (HACCP, sanitation laws in PNG) Stock control and inventory management Excellent communication, interpersonal and team skills are essential. A proven track record in complying with best practise safety standards, initiating improvements to standards and leading and mentoring/training team members on safety would be desirable Experience working in remote field-based locations, preferably on roster.
